Gourmet Pasta Salad

Whip up this tasty gourmet pasta salad for you and your loved ones in only 30 minutes!

SERVES 6

For the dressing
1 garlic clove, crushed
 cup balsamic vinegar 
⅓ cup olive oil
½ tsp honey

For the salad
500 g penne, cooked according to packet instructions
1½ cups green olives, pitted and chopped
1½ cups sweet piquanté  peppers, chopped
100 g goat cheese, chopped
¾ cup basil, torn
¼ cup micro herbs
½ cup hard cheese shavings

For the dressing 
1. Mix all the ingredients together. 

For the salad
1. Pour the dressing on to the pasta and toss to combine.
2. Mix through the olives and peppers. Season to taste.
3. Pour the pasta salad into a serving bowl and gently stir through the goat cheese, basil and micro herbs.
4. Sprinkle with the cheese shavings just before serving.

 

Top Tip: It is important to rinse your pasta with cold water after you have drained it. This will prevent it from cooking further and becoming soggy, and help it keep its shape.
